Production method: After careful monitoring of physiological and phenolic ripening, the grapes are hand picked with strict selection in the vineyard. On arrival at the cellar they are gently destemmed and left in a temperature controlled tank for a few days of pre-fermentative maceration at low temperature. Fermentation takes around 9 days at 25°C. The garpes are then gently pressed with increasing pressure: the wine is then transferred to oak barrels where it undergoes malolactic fermentation.
