| Production method: | After careful monitoring, the grapes are picked by hand in multiple passes through the vineyard to ensure that only the perfectly ripe and healthy bunches are picked. In the cellar the grapes are destemmed at a very low tmperature thanks to the use of dry ice which helps to avoid any oxidisation of the must and preserve the aromas. After a short maceration at 7°C, they are gently pressed with increasing pressure, left to precipitate for a few hours and then fermented in temperature-controlled stainless steel tanks. | |
