Production method: The grapes are picked in multiple passes through the vineyard to ensure that only the perfectly ripe bunches are picked. In the cellar the grapes are destemmed and dry ice is added to avoid any loss of aromas or the oxidisation of the must. They are macerated for a few hours at 7°C. They are pressed quickly in a pneumatic press, left to precipitate for a few hours and then fermented in temperature-controlled stainless steel tanks. The wine does not undego malolactic fermentation.
